I just ran into this problem yesterday while sifting through hoards. What helps me in general is to go to my inventory and filter by each category one at a time (the dropdown that says "Display: [All Items] [Default/All]") to figure out what I have too much of and yeet it.

Another thing is if you have stacks and stacks of special/evobar ingredients, what some players do is make evobars to get rid of those items.

It sounds like you're already good at keeping track and selling stuff though; I think in your case you might have to think about possibly letting go of rare items that you never use. I've had to do this a few times just because there aren't enough market/usershop slots to sell stuff (or nobody buys my stuff lol).
