Hey again @ToothedMammal, plants are ready to harvest when they say Ripe Product.

The growth stages are as follows:

Planted > Sapling > Growing Plant > Full Grown Plant > Growing Product > Ripe Product (harvestable)

Fortunately Giant Clover is one of the fastest growing plants, so it should be ripe in a day or two.
